Understory is a recurring dinner series from Burle’s Bar and The Victorian that brings together talented chefs, exceptional winemakers and distillers, and long-table conversations built around food, wine, plants, and place.

Inspired by the layered world beneath a forest canopy, Understory takes place in the lounge below Burle’s Bar — a space designed for thoughtful dining, conversation, and shared experience. Like the understory of a rainforest, the series is rooted in what grows beneath the surface: connection, curiosity, and a deep appreciation for the people and places behind what we eat and drink.

Each dinner features a different chef, maker, region, or spirit, with menus and pairings designed specifically for the evening. From intimate wine dinners to cocktail-focused collaborations, Understory is meant to be immersive, educational, and beautifully shared.

Chef Robbie Pacheco x Winebow Imports

Monday, May 18, 2026 | 7 - 10PM

Our next Understory Dinner takes place Monday, May 18th from 7–10pm, featuring Chef Robbie Pacheco. Seattle-born and Georgia-raised, Robbie has a deeply personal and creative connection to food—approaching each dish as an opportunity to explore flavor, texture, and composition. His style draws on global influences, a curiosity for spices, and a thoughtful approach to plating that highlights the individuality of each ingredient.

For this dinner, he’s created a multi-course menu that moves from light, expressive beginnings into more layered, structured dishes—featuring oysters with sweet chili ponzu and citrus foam, flounder crudo with pomelo and mala, and venison with blueberry bordelaise, finishing with a bright, spring-driven pavlova. The evening will be paired with a selection of wine from Winebow Imports curated by Adam Venable, along with a welcome cocktail from Burle’s featuring a Winebow spirit. Guests will also enjoy a private shopping hour at The Victorian before dinner—an opportunity to explore the shop after hours with a drink in hand before settling in for the evening.

Chef Briana Riddock × Donum Estate

Our inaugural Understory dinner welcomed Atlanta chef Briana Riddock and wines from Donum Estate in Sonoma for an evening centered around thoughtful food, expressive wines, and shared conversation.

Guests were greeted with a welcome cocktail from the Burle’s team and invited to watch a live paella cooking demonstration before dinner began. Chef Bri created a seafood-forward five-course menu built around local seasonal ingredients, including three plated courses, a family-style entrée, and dessert, each paired with Donum Estate wines.

Throughout the evening, guests explored Donum’s site-driven Chardonnay and Pinot Noir through guided pairings and conversation about terroir, biodynamic farming, and the winemaking process. The night also included a private shopping hour at The Victorian for dinner guests before the meal began.

The evening set the tone for what Understory will become: a monthly gathering shaped by exceptional food and drink, thoughtful people, and the kind of experience that lingers long after the night is over.
