Introducing Understory — a new dinner series from Burle’s Bar and The Victorian celebrating the intersection of food, wine, plants, and place.

Inspired by the layered world beneath a forest canopy, Understory takes place in the lounge beneath Burle’s Bar — a space designed for thoughtful dining, conversation, and shared experience. Each dinner highlights talented chefs alongside exceptional winemakers and distillers whose work reflects a deep connection to land and craft.

Our inaugural evening features wines from Donum Estate in Sonoma, a biodynamic producer focused exclusively on site-driven Chardonnay and Pinot Noir. The estate is known not only for its expressive wines, but also for its monumental outdoor art collection woven throughout the vineyards.

The menu will be created by Chef Briana Riddock, a celebrated Atlanta chef, featuring seafood-driven dishes built around local seasonal ingredients. The evening includes a welcome cocktail from the Burle’s team, a live paella cooking demonstration, and a five-course dinner — three plated courses, a family-style entrée, and dessert — each paired with Donum Estate wines.

Throughout the evening, guests will explore the wines’ terroir and winemaking process through guided pairings designed to be educational, fun, and beautifully shared.

Chef Briana Riddock is the Chef de Cuisine at Forth Hotel, known for her ingredient-driven, seasonal approach to cooking and thoughtful flavor combinations. With a dedicated following and recipes featured in Food & Wine and other publications, Chef Bri brings a creative, refined perspective to the table — emphasizing local ingredients, technique, and a sense of occasion in every dish.
