July Wine School
Champagne & Fried Chicken
Wednesday, July 8, 2026 | 7 - 9pm
We're making a few changes to Wine School this month, and we couldn't think of a better place to start than Champagne.
For July, we're expanding the format and welcoming two of our favorite wine professionals to the table. This month, we're excited to welcome Whitney Blue alongside Adam Venable for an evening dedicated to grower Champagne. Together, they've selected six bottles that highlight the remarkable diversity of the region. From razor-sharp Blanc de Blancs to deeply vinous grower rosés, we'll spend the evening exploring six distinct expressions of Champagne from two outstanding producers.
As an added treat, three of the Champagnes will be poured from magnum bottles, a format long prized by collectors and winemakers alike for its ability to age gracefully and showcase Champagne at its very best.
And because some pairings are simply too good to ignore, we'll be serving fried chicken and French fries alongside the wines. Champagne and fried chicken is one of the great food-and-wine combinations for a reason: the wine's acidity and bubbles cut through the richness perfectly, making both the food and the Champagne taste even better.
Whether you're already a Champagne devotee or simply curious about what makes these wines so special, this is a rare opportunity to taste through six thoughtfully selected bottles side-by-side while learning about the growers, vineyards, and winemaking philosophies behind them.
The Wines
Vouette et Sorbée (Presented by Adam Venable)
A cult-favorite grower Champagne estate in the Côte des Bar, Vouette et Sorbée is known for biodynamic farming, native yeast fermentations, and terroir-driven wines that prioritize place over house style.
Fidèle Blanc de Noirs NV (Magnum)
100% Pinot Noir from Kimmeridgian limestone soils. A benchmark expression of the estate with orchard fruit, brioche, chalky minerality, and a savory saline finish.
Blanc d'Argile NV (Magnum)
A 100%Chardonnay sourced from clay-rich soils. Richer and more textured in style, with notes of ripe apple, pear, and layered mineral complexity.
Saignée de Sorbée Rosé NV
A sought-after rosé made using the traditional saignée method. Deeply colored and intensely flavored, showing red berries, blood orange, spice, and remarkable structure.
Geoffroy (Presented by Whitney Blue)
A family estate with nearly four centuries of winemaking history in Cumières Premier Cru. Geoffroy's Champagnes are known for their precision, energy, and ability to balance richness with remarkable freshness.
2017 Volupté Millésime Blanc de Blancs 1er Cru Extra Brut
An organic Chardonnay from highly chalky Premier Cru vineyards. Bright, focused, and intensely mineral with vibrant acidity and a long, complex finish.
NV Expression 1er Cru Brut (Magnum)
A blend of Pinot Meunier, Pinot Noir, and Chardonnay crafted using a perpetual reserve dating back to 1970. Balanced and expressive, with generous fruit and a dry mineral finish.
NV Rosé de Saignée Brut
Made exclusively from Pinot Noir using the saignée method. Rich and textured with ripe blood orange, wild berries, and a fuller-bodied style rarely seen in Champagne rosé.
Join us for an evening of grower Champagne, good conversation, fried chicken, and French fries. We can't wait to share these bottles with you.
